Egg Omelet Recipe

Ingredients : Serves 4-6
Eggs: 6
Canned crab meat or shrimp: 1/2 cup
Chinese ham or barbecued pork, shredded: 2 oz
Dry black mushroom, soaked and shredded: 3
Bean sprouts or shredded bamboo shoots: 1 cup
Green onion, shredded: 1/3 cup
Soy sauce: 1 tablespoon
Salt: 2 teaspoon
Soup stock: 1/2 cup
Oil: 8 tablespoons

Method :
Beat eggs until foamy, add 1 teaspoon salt and soup stock (or cold water), mix again.
Heat 6 tablespoons oil in frying pan, stir fry crab or shrimp, ham or pork, mushrooms, bean sprouts or bamboo shoots and green onion.
Add soy sauce and salt. Stir fry about 1/2 minute over high heat.
Splash 2 tablespoons oil down side of pan and add in the egg mixture.
Fry on both sides until golden, remove to plate and serve.

Although omelets are fairly simple, they provide many opportunities to create something that is really delicious rather than run of the mill. For example, they taste best if you use fresh eggs and add complementary herbs or spices to the egg mixture. Some people choose to whisk water or milk into the beaten eggs to produce omelets that are fluffy and light. Finally, it is important to choose toppings that harmonize well.
